Located in the vibrant heart of fashion district of Milan, The Carlton, opening in 2025, will have 71 rooms and suites, a restaurant, a wellness center and an exclusive garden lounge with an amazing view of the city. Designed by Olga Polizzi in collaboration with Paolo Moschino and Philip Vergeylen, the interior will combine tradition and modernity, delivering an authentic Milanese experience. Situated in a prime location overlooking Via della Spiga, renowned for its luxury boutiques, and just a few steps from Via Montenapoleone, The Carlton is set to become the new landmark of the fashion district.

The Position

FOOD & BEVERAGE MANAGER

Main purpose:
The F&B Manager is responsible for the overall F&B division, which includes Restaurants, Bars, In Room Dining, Banqueting and any F&B activity related to the Rocco Forte House, Milan.
He/she needs to maintain and consolidate the well-known exceptional service of the F&B Division for our Guests in compliance with Rocco Forte Hotels quality standards and procedures.

Reports to: Hotel Manager

Main duties & responsibilities:
  • Responsible for F&B Division (Breakfast Lounge, Restaurant, Bars and In Room Dining departments) effective management and standards delivery. He/she will be the role model of Rocco Forte Hotels service style: great attention to personalization of Guest service and interaction and exquisite knowledge of the local culinary traditions;
  • Responsible for selection, appraisal and professional training and development of the F&B Division department staff. Responsible for talent management, acting as a coach and trainer for all the F&B staff;
  • Responsible for ensuring that Guests are greeted in a warm and professional manner, in accordance with Rocco Forte Hotels standards
  • With the help of the Heads of Department, he/she develops an operating budget for the F&B Division revenue, costs, staffing and all necessary equipment, monitoring and taking corrective actions to help assuring that budgeted sales and cost goals are attained;
  • Ensures that adequate cash procedures are followed and that documentation is reported in an accurate and timely manner, as well Guest check analysis, ticket controls, and daily sales reports and analysis;
  • Assists the Hotel Manager in order to assure compliance with health and safety regulations in the F&B Division, together with the Executive Chef;
  • Develops and implement innovative strategies to improve the Guest experience;
  • Assists the Hotel Manager and the General Manager with special projects (e.g. weddings, conferences and partnerships);
  • Develops and implements strategies based on a deep understanding of competitor benchmarks and market trends;
  • Cooperates with all the other Managers in order to achieve Hotel goals and to provide the best personalized experience to our Guests.

Other requirements:
  • Professional experience, preferably at an international level, in the same role for at least three years;
  • Italian and English knowledge at Advanced level. Third language preferred;
  • Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding;
  • Experience in quality driven projects;
  • Familiarity with F&B Management systems.
